ooh I had eggs over easy and snacked a little on chocolate ice cream while the eggs were cooking.... no tea, but im about to make coffee! yay coffee!

I've always been a little perplexed by the various names that you huys give to fried eggs.  Please could you elaborate further.  I assume over easy is, like cooked properly on one side and a bit on the other...?

This is actually North American, mate.


Fried Eggs have hard yolks.


Over X, X is the amount to which the yolk is cooked.


Easy - Barely


Medium - Erm, medium


Here's my Grand Pappy's version of 'over easy':





Server: "How would you like your eggs?"


Claude: "'Over and out', please."


Server: "I'm sory, 'over and out'?"


Claude: "Yes, over and out of the God damned frying pan."


Server: "I see."

Over easy is the best... cuz then the yolks are all liquid and you can scoop it up with toast

Sauce? What kind of sauce are we talking about here Suey-mate? Erm, isn't that point of getting the yolks runny?


No, no, no. In America, you grind up the egg as a stand-alone entity, then rip off pieces of toast and dip them into the spill-off, or get a fork full of hash browns and run that through the yolk, etc...

Hollandaise Sauce:
3 large egg yolks
1 1/2 tablespoons cold water
1/2 cup warm clarified butter
1 to 3 teaspoons fresh lemon juice
Dash hot red pepper sauce (optional)
Salt and ground white pepper to taste
